Use eggs for these 2 easy dishes

In addition to being relatively inexpensive, eggs offer a wide-variety of great, nutritional benefits. Calorie-dense and protein-packed, eggs can be used in countless ways when baking and cooking!
For cancer patients who may be going through treatments such as radiation or chemotherapy, protein and calorie needs will likely increase since your body will be working harder. Since some patients may experience taste changes or appetite loss throughout the course of treatment, finding foods that taste or sound good to you may become more difficult. If you do experience this, it will be important to make the foods you do eat really count. For patients with cancer, eggs can be an easy way to get high-quality nutrients without having to eat a large amount of food.
If you are watching your cholesterol levels, consider using just the egg whites! They still contain most of the protein but have no cholesterol.

Microwave Ham, Mushroom, and Swiss Cheese Coffee Cup Scramble
- 1 large egg
- 1 tbsp. milk
- ¼ cup diced mushrooms
- 1 slice deli ham, chopped
- 2 tbsp. shredded Swiss cheese
- Salt and pepper to taste
Directions
- Beat eggs, milk, and salt and pepper together in a microwave-safe coffee mug. Mix in mushrooms and ham.
- Microwave on high for 45 seconds. Remove and stir. Microwave for an additional 30-45 seconds until eggs are almost set.
- Top with shredded cheese and serve immediately.
Muffin Tin Frittatas
Ingredients
- 10 eggs
- 1 red bell pepper finely diced
- ¼ cup milk
- ⅔ cup shredded cheese
- Salt and pepper to taste
Directions
- Preheat oven to 375°.
- Spray a 12-cup muffin tin with cooking spray and set aside.
- In a large bowl, whisk eggs, milk, cheese, and salt and pepper together. Add in red bell peppers.
- Divide egg mixture evenly between the 12 cups. Bake until the eggs are set, 12 to 15 minutes.
- Let cool slightly before serving.
- To reheat, place frittata in the microwave for 45 seconds to 1 minute. Good for 1 week after baking.
Tips for adding more flavor: Different spices, seasonings, or veggies can be added to either of these recipes to create a more enhanced taste. Try adding diced green pepper, parsley, or chili powder!
